Observation: Hand washing sink next to Rice roll preparation area, hot water faucet knob malfunctioning
Correction: Repair hot water faucet knob at hand washing sink, alternate hand washing sink available.
Comments

Hand washing station faucet functional.
Unscented bleach available for sanitizer.
Sanitizer solution in spray bottle tested at 100 ppm Chlorine.
Dishwasher final disinfecting rinse at 50 ppm Chlorine. Test strips required to test dishwasher final disinfecting rinse.
Staff to be trained to verify dishwasher is supplied with the required detergent (soap) and sanitizer concentrate and pumps are functional to ensure chemicals are added during wash cycles.
Handwashing sinks are to be kept free for handwashing and not obstructed.
Ensure cleaning records maintained as per sanitation plan.
