Observation (CORRECTED DURING INSPECTION): There is no garbage container located by the main handwashing station in the cooking area.
Corrective Action(s): Install a garbage container in the kitchen area adjacent to handwashing station. This will help to reinforce that all staff are washing hands on routinely basis.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Dry storage area found to have evidence of pest activity. Pest control is in place and being done on routine basis, however cleaning of areas is vital to the protection of food items from contamination.
Corrective Action(s): Ensure to clean dry storage areas and to check daily for any pest activity. Cleaning of dry storage are is to be completed immediately.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Hard to reach areas (ie. behind and under equipment/food cook areas) and external components of all equipment require thorough cleaning. Dry storage area requires thorough cleaning. This can lead to the contamination of foods and attract pests. Dishwashing area requires thorough cleaning as well.
Corrective Action(s): Clean all areas as soon as possible. In addition to the cleaning, provide Environmental Health Officer with a plan to be implemented for all sanitary procedures.

Observation: Shelves are being used for food preparation and hot food storage. These shelves are not to be used for any ready to eat foods or food preparation. This can lead to the contamination of food items.
Corrective Action(s): Remove these shelves immediately and Install new food prep tables.

Routine Inspection.
Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
All coolers found at 4c or below and equipped with thermometers.
Walkin cooler at 4c. Drawer cooler with chicken found at 4c.
Freezers at -18c.
Hot holding units (for peri rice) at 65c.
Temperature log is available onsite.
Dishwasher found at 50ppm concentration.
Quat sanitizer found at 200ppm concentration in sani-buckets in cook area.
General sanitation
Foods are being located off the floor throughout facility.
Pest control is in place. Abell Pest control conducted last inspection on Feb 20/18.
A copy of the inspection report was provided to environmental health officer (EHO) during time of inspection.
New ceiling has been installed throughout the kitchen area.

The following requires operators attention:
1. See above noted violations
2. Send EHO a copy of the plan to be implemented for more thorough cleaning procedures. Cleaning in hard to reach areas as discussed during the inspection must be done on a routine basis.
3. Provide EHO with a plan of any renovations/changes or decisions that are to be made by head office.
