302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Metal spatula as well as other utensils observed being stored in container of sanitizer next to grill area. Metal spatula had significant amount of food debris all along it but the sanitizer only reached half way up. Staff stated that the sanitizer is changed every few hours but utensils only cleaned at end of day.
Corrective Action(s): Utensils that are in continuous use must be cleaned regularly throughout the day (at least every 2 hours). Ensure that utensils are properly cleaned throughout the day as sanitizer is not able to penetrate food debris or grease.

Observation: Significant amount of mouse droppings observed in cupboards along the baked goods display and espresso machine as well as in the kitchen in the hard to reach areas.
Corrective Action(s): Deep clean entire premise, removing all droppings and sanitizing areas where food / containers are stored. Have traps put in to monitor for and address any pest issues that may be present.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Mop sink that also doubles as a hand washing station has a splitter valve installed at the end of the tap making it difficult to use for hand washing. Attempt made to use tap to wash hands lead to water spraying over the edge of the sink onto floor as the pressure was difficult to regulate with the small valve handle and angle of the valve. This was also not present in previous inspections.
Corrective Action(s): Reconfigure this setup that would make it easy for staff to use. Due: January 9, 2024

Note: Limited prep space available in kitchen area and all prep spaces were occupied during inspection. Recommend adding more/larger prep tables.

General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C
√ Good food storage practices noted such as thawing in cooler
√ Food up off floor ≥6”, good stock rotation noted
√ Main hand wash station fully stocked with hot and cold running water, liquid soap and paper towel
√ Quats sanitizer available at 200ppm
√ High temperature dishwasher sanitizing at ≥71°C
√ Three compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is satisfactory
√ Thermometers present
√ Temperature logs maintained and no issues with equipment have been noted
√ Staff with FoodSafe (or equivalent) present.
√ No concerns with staff hygiene noted during inspection
√ Permit posted in visible location
