Observation (CORRECTED DURING INSPECTION): The final sanitizer concentration on the plate surface in the low temperature dishwasher registered at 25 ppm chlorine at the start of inspection. Bucket containing the chemical sanitizer appeared to be almost empty.
Corrective Action(s): - Chemical sanitizer bucket was replaced with a new bucket and the sanitizer line of the dishwashing unit was primed.
- Final sanitizer concentration on the plate surface registered at 50 ppm chlorine.
- Dishes that were sent through the dishwasher today were in the process of going through the unit again.

Routine Inspection
- Walk-in cooler and walk-in freezer registered at or below 4 deg C and at or below - 18 deg C, respectively.
- No hot holding observed at the time of inspection.
- Handwashing station was supplied with hot and cold running water liquid soap and paper towel.
- Low temperature dishwasher available for mechanical ware washing. (see code 302)
- Food contact sanitizer bucket with wiping cloth registered at 200 ppm QUATs
- Two-compartment sink available. Drain plugs are available
- Overall sanitation is satisfactory
- Supervisor indicated licensed pest control services are in place (weekly service)
- Time temperature logs are maintained
- Ice machine is maintained in a sanitary manner. Scoop is stored outside.
