Observation (CORRECTED DURING INSPECTION): No food-contact surface sanitizer was available in production areas, as dispenser was not working.
Corrective Action(s): Operator manually mixed Quat sanitizer solution in spray bottles for each production station at time of inspection. 200 ppm quats detected.

Observation: 1) Front display cooler for deep fried items and back three-door cooler for storage of food waste were measured to be at 10C and at 13C.
2) Sanitizer dispenser was not working at time of inspection due to a plumbing issue.
Corrective Action(s): 1) Repair both coolers such that temperatures of 4C or colder can be maintained. Do not store any food items in the display cooler until it has been repaired. Food wastes can continue to be stored in back cooler.

Comments

- Hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Front sliding glass door cooler was measured at 2C
- All chest freezers and walk-in freezer were measured at -18C or colder
- No hot holding done on-site
- Production equipment maintained in sanitary conditions. Some equipment in use at time of inspection - ensure to thoroughly clean and sanitize at the end of the day.
- Spice weighing/mixing room satisfactory
- Dry ingredient bins maintained in sanitary conditions
- Pest control is in place and invoices were available for review. No signs of pest activity noted inside facility at time of inspection.
- All bay doors have been replaced such that proper seals are provided - good.
- Food safety plan for ice blocks was received time of inspection
- Operators and staff have up-to-date foodsafe level 1 certificates

*Deep cleaning is required in hard-to-reach areas (corners, under equipment/fixtures, area under stairs around sanitizer dispenser).
