Observation (CORRECTED DURING INSPECTION): Wiping rags were stored directed on food preparation surface in the back kitchen counter.
Corrective Action(s): All wiping rags must be stored in a sanitizing when not in use. If sanitizing solutions are stored in spray bottles, wiping rags must be stored in a dirty container and not on food contact surfaces. An alternative will be to used disposable wiping rags.

Observation: Sunrise containers used to stored whole and unwashed raw vegetables.
Corrective Action(s): To prevent cross contamination, do not use meat containers to store vegetable products. Containers must be properly and adequately washed and sanitized within the 3-compartment sinks in accordance to the manual ware washing method.

304 - Premises not free of pests [s. 26(a)]
Observation: Fruit fly activity noted in the back kitchen. Accumulation of fruit fly active was noted on the wall underneath the back food preparation table. A fly trap has been installed above the prep-sink located beside the prep-table.
Corrective Action(s): Have the area properly washed and sanitized. Ensure all floor drains are flushed with hot water and cleaned daily. Notify pest control company of the problem if it persists.

Comments

Routine inspection conducted and the following were noted:
All cooler units were less than or equal to 4C.
Freezer units at -18C.
Internal temperature of hot foods were greater than 60C.
3 -compartment sink was setup. Sanitizing sink was filled with a 200ppm quats solution.
Previous pest problem of cockroaches was noted within the premises.
Hand washing stations in the front serving and back kitchen area was satisfactory.
Food items covered within the cooler units.
