Observation (CORRECTED DURING INSPECTION): It was noted that the staff was not sanitizing the dishes/utensils after washing them in 3 compartment sink.
Corrective Action(s): Ensure that the utensils/food contact surfaces are washed and then sanitized with an approved sanitizer followed by air drying.
Bleach solution was available on site and the operator stated that all the dishes/utensils will be cleaned and sanitized with bleach solution (100-200ppm). Advise staff to follow the 3-compartment dishwashing method signage posted in your dishwashing area.

Comments

Routine inspection conducted at the Bakery of Organic Warehouse and the following observations were made:

Temperature:
- All temperatures meet health requirements.
- Bakery walk-in cooler at 2C.
- Display cooler at 3C.
- Daily temperature logs were recorded and found up to date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer spray bottle was available and the concentration of bleach solution was noted way above 200ppm.
**Follow manufacturer's instructions to prepare bleach solution. Recommended concentration for bleach (5%) is 100-200ppm. Chlorine test strips can be used to verify the concentration.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either stored in original packaging or covered.
- Storage area was well-organized.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
