Observation: Hot water temperature at the double sink measured 28-29 degrees C at the time of inspection.
Only small quantity of pot and pan detergent left in the detergent jug at the time of inspection.
Corrective Action(s): Repair or adjust the hot water tank so that hot water is available at a minimum temperature of 45 C at every sink. ( Immediately).
Purchase dish detergent/pot and pan detergent for cleaning/washing blender jugs and other utensils ( Immediately)

Observation: Build up of food debris and dirt etc. noticed in the dry storage room, behind the ice maker.
The mop sink found to be extremly filthy.
Corrective Action(s): Clean throughly in above areas. In additon, thoroughl cleaning required in cabinets under all sinks, underneath the panini coolers and floors in general. ( Nov. 1, 2018)

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Jugs used for making smoothies not maintained in a sanitary condition. Slime build up noticed on the underside of most blender jugs. Cleaning procedures not adequate as per Jugo Juice corporate sanitation plan.)

Comments

* Ensure to thoroughly wash and rinse all utensils and equipment in hot water before soaking in
the sanitizer solution. Discard the sanitizer once it gets murky or cloudy with food debris (corrected during the inspection).
* Ensure to replace or install light bulbs in the dry storage room ( By Nov. 1, 2018)

According to the food service worker on site, wheat grass extractor is washed/scrubbed with hot soapy water every 4 hours.

Under-counter refrigerators < 4 C.
Under-counter freezers < -18 C.
Walk-in freezer at -13 C.
Liquid soap and paper towels available at the hand sinks.
Quats sanitizer in spray bottles ( Sani-stuff ready to use sanitizer) tested 200 ppm.
Quats sanitizer in wiping cloth bucket : 200 ppm.
