Observation (CORRECTED DURING INSPECTION): NEW OBSERVATION: Spice sauce observed improperly cooling in large containers -operator indicates he will transfer the large containers into the fridge after a few hours

Internal temperatures of the large containers at 49 deg C, 78 deg C and 82 deg C

Operator is not following the Food Safety Plan for safe and fast cooling of perishable foods
Corrective Action(s): Operator transferred the 49 deg C pot into a wide shallow container into the fridge for fast cooling

The same will be done with the other two pots once temperatures have gone down to 60 deg C

Operator to obtain at least one ice wand as no ice machine is available for fast cooling
Operator to fill-in cooling charts for the spicy sauce to be submitted weekly for verification

-Kitchen shelves have been reorganized, cleaned and appears sanitized
-Handwash sink adequately stocked and clear for use
-Bleach sanitizer buckets >100ppm as per chlorine test strips -wiping towels in solution when not actively used
