Observation: An open bag of potato starch was being stored on the floor in the storage room. A box of potato was stored directly on the floor. Condensation was noted inside the clean plastic inserts that were stacked together.
Corrective Action(s): Store food product in hard containers with tight fitting lid. Store pototoes off the floor. Allow inserts to air dry after washing before using or being put away.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Staff washroom at the back of the kitchen did not have warm water (time of the inspection 3pm and the water was allowed to run for at least 3 mins).
Corrective Action(s): Service the handwashing station.

Comments

Blast coolers are being used to cool food. The probe sensors for the units are not being use currently as staff are awaiting training from the supplier company. Verify with probe thermometers that sauces, meats...etc are meeting safe cooling rates 60C-20C after 2 hrs and 4C after another 4 hrs.

Handwashing stations in the kitchen are satisfactory.
General sanitation, organization, worker hygiene are satisfactory.
Temperature of refrigeration units, freezer units, and dishwasher are satisfactory.
Temperature record sheets are being completed.

Sous vide may be carried out in the future. Ensure the procedures meet with BCCDC guidelines (to be provided).

No buffet service today (Wed- Sun 11am-8pm). Unable to check temperature of the food in the buffet line. Sneeze guards are in place.
