Observation (CORRECTED DURING INSPECTION): Dirty rags found sitting on food contact counters and prep table.
Correction: always keep wash cloths in sanitizer buckets, the rags were moved to the buckets at time of inspection.
Rationale: rags can cause microorganisms to grow in them and wiping counters with dirty rags can cross-contaminate the food contact surfaces.

Observation: 1) Steel bowl being used to scoop out flour from container. Bowl was found inside the container.
Correction: remove the bowl and properly wash and sanitize. Store bowl outside the container.
Rationale: scoops can cross contaminate the foods when left in containers.

2) Packages of spices and baking soda were left open in dry storage.
Correction: close up open packages and containers when storing inside racks.
Rationale: dust and debris can fall into the packages or other products can spill into the packages. Operator zipped up all opened packages.

Observation: Sanitizer buckets were not labelled as sanitizer. A similar cream cheese bucket was being used to store coffee at the front counter.
Correction: label sanitizer buckets to prevent confusion and mistakenly re-using chemical buckets for food.

Observation (CORRECTED DURING INSPECTION): No frills yellow shopping bag was being used to store buns and bread crumbs inside the chest freezer upstairs.
Correction: store food in food grade containers. Discard the no-frills bag and keep food in Zip lock or other food grade bags. Operator discarded bag.
Rationale: Plastic shopping bags are single use and not food-grade. They should not be used to store unpackaged foods.

Observation: Domestic cooler next to meat slicer did not contain a thermometer.
Correction: purchase a thermometer to keep inside the cooler.
Rationale: accurate thermometers allow for temperature monitoring and prevents temperature abuse.

Comments:
-Handwashing sinks adequately equipped with hot and cold water, liquid soap and paper towels (front and main kitchen).
-All coolers were maintaining 4C or lower at time of inspection.
-WAlk-in cooler was at 3.1C.
-All freezers were at -18C or lower.
-Walk-in freezer was at -19C.
-The dishwasher was maintaining 100ppm chlorine at dish surface.
-The two-compartment sinks had their plugs present.
-Meat slicer was adequately cleaned and in sanitary condition.
-No signs of pests were noted. Last pest control report was available for review.
-Raw meats stored on bottom, ready-to-eat foods on top.
-Food stored at least 6" off the floor.
-Permit is posted for viewing.
-Chef has food safe level 1 certification valid til October 10, 2020.
