Observation (CORRECTED DURING INSPECTION): Sliced bacon and smoked pork hock stored in a cooler at 7 C. Packaging states 'Keep Refrigerated'.
Corrective Action(s): These items were re-located to walk-in cooler. Follow the storage instructions on the label.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Band saw and meat grinder (stored in walk-in cooler) only cleaned once a day (as per staff and owner).
Corrective Action(s): Band saw and meat grinder must be cleaned and sanitized at the following frequency:
-every 4 hours or,
-after each use (if not being used continuously) or,
-when a different product is used (chicken to beef, beef to pork etc.).

Increase frequency of cleaning and keep a log. Follow manufacturer's instructions for cleaning and sanitizing.
Provide an updated sanitation plan (cleaning schedule) to your Environmental Health Officer by June 7, 2022. .

Corrective Action(s): Ensure door is kept closed to keep flies out. There must be no flies in the premises.
Ensure hanging fly trap does not contaminate food by hanging it away from food and changing it frequently.

Observation: 1. Hand sink and prep sink very dirty with residue.
2. Walk-in cooler dirty - dried up blood stains on walls.
3. Display coolers full of old food crumbs/dirt/debris.
4. Entire premises visibly dirty and lacks in sanitation.
Corrective Action(s): 1-4. Clean and sanitize all surfaces and equipment (including behind and underneath equipment) so that they are visibly clean. Correct by June 7, 2022.

Observation: 1. Display cooler that is used for the storage of bacon and ready-to-eat meats ambient air temperature at 7 C.
2. Chest freezer in back has build up ice making it very difficult to close.
Corrective Action(s): All coolers must be 4 C or below. Repair/adjust setting so that this cooler is at 4 C or below.
Do not use for refrigerated items until it is 4 C or below. Correct immediately.
2. Remove/prevent ice build up in freezer so that freezer can close properly.

Routine Inspection
-Display coolers at 4 C or below (except for bacon cooler - refer to above).
-Freezers -18 C or below.
-Hand sink equipped with hot/cold running water, liquid soap and paper towel.
-Surface sanitizer available.
-General sanitation is poor and requires immediate attention.

-Flooring needs to be replaced as there are many broken tiles making it difficult to clean. Before doing any renovations, please submit plans for approval.

***Facility has started to serve samosas without approval. Do not sell samosas until a hand sink is installed nearby.
The sale of ready-to-eat foods such as samosas also requires a change in the type of approval (food permit and fee required).

Follow-up inspection required.
