306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of food debris noted in several areas of premises. These include:
- Bottom of display cooler;
- floor below and around large containers of liquids adjacent to display cooler;
- Behind and around garbage bins and equipment in back of premises.
Corrective Action(s): Clean up these areas. Remove all cardboard from cooling units. This will facilitate better cleaning procedures in this unit and help air flow to all parts of cooler.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: A) Countertop at double sink and handsink in food prep area significantly deteriorated and has been patched many times. Arborite pulling away from wood underside. Mould and slimes building up. This countertop is no longer viable as a food contact surface.
B) Grease trap lid in extremely poor condition. Rusting away and virtually impossible to clean. Water is leaking from the drain pipe above. Water is stagnating on top of trap lid.
Corrective Action(s): A & B) Countertop must be replaced. Grease trap lid must be replaced. Any leaks originating from the taps or drain pipes must be repaired. This work must be completed by next scheduled inspection.
