-High temperature wash 81.5 deg C at plate level on the second cycle. Have the first cycle of the day on a dry run to warm up the washer temperature adequately

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation good
In-use utensils/equipment: meat slicer is cleaned and sanitizer after each use -okay
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests
