Observation: Food waste, debris, encrusted food/dough/flour throughout bakery including walk-in freezer, walk-in cooler, bakery racks, rangehood and canopy, oven, undersides of both bread slicer and the sheeter, cupboards and drawers (including edges, door faces and backs).
Corrective Action(s): Bakery needs a thorough general cleaning including shelves, cupboards and drawers (including doors), bakery racks, equipment (especially the undersides), low traffic areas of floor especially under shelving.
