Observation: General cleaning in kitchen is good. Shelves and floor have food debris/dirt and require cleaning.
Corrective Action(s): Deep clean floor in hard to reach areas (under equipment and along walls). Clean dry storage shelves. Clean under cutting boards in sushi prep area. Wooden pallet needs painting (under soya sauce) - covered ok. Remove unneeded items. Wooden tables to be re-surfaced. Correct by - March 1/2020.

Notes:
- Food Safe Level 1 - valid until Dec. 2020. Renew before it expires (Refresher course www.foodsafe.ca).
- Food Safety plan and sanitation plan - Keep copies on site.
- Sushi rice is made every 2-3 hours (vinegar added) - ok.
- Receipts are available. Tuna & Sockeye salmon previously frozen for required time (-20 C for 7 days) by supplier and then stored at - 20 C - good.
- Coolers (4) are at 4 C/ 40 F - good. Freezers are at -20 C - records kept- good.
- Miso soup >60C/ hot rice >60 C.
- Tongs stored in hot water > 60 C (74 C measured).
- Chlorine bleach 200ppm used for wiping cloths - good.
- Hand sinks have sopa & paper towels.
- Commercial dishwasher has a final chlorine sanitizing rinse (50ppm) - good.
