Observation (CORRECTED DURING INSPECTION): Low temp mechanical dishwasher is used for dishwashing. 0ppm chlorine residual observed during rinse cycle. This could result in inadequate sanitation of food contact surfaces. Staff called the technician during inspection. In the mean time, 3 compartment dishwashing sink will be used for manual dishwashing. Bleach bottle available.
Corrective Action(s): Ensure that all food contact surfaces, utensils and dishes are adequately washed and sanitized.

Observation: Low temp mechanical dishwasher was run multiple times during the inspection but no chlorine residual detected. Staff called the technician and will have it repaired by tomorrow.
Corrective Action(s): Please ensure that dishwasher is maintained in good working order. Repair/service it immediately.

Comments

Routine inspection conducted.

Findings:
- General sanitation of the facility was satisfactory.
- Temperature of prep coolers, walk in cooler & stand up coolers recorded at or below 4C.
- Stand up and chest freezers recorded below -18C.
- Hot holding units with soup & gravy recorded above 60C.
- Temperature logs maintained and found up to date. Good.
- All handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment dishwashing sink available for manual dishwashing.
- 12.5ppm iodine recorded at glass dishwasher in bar area.
- Food was stored at least 6 inches off the floor.
- Excellent food storage practices followed by staff. Good.
- Staff stated that pest control company conducts weekly inspections.
- Glue traps placed throughout the facility.

Note:
- 1 prep cooler was not in use. No food products were stored in it.
- Ice machine was not in use.

Follow up inspection will be conducted tomorrow to check the low temp dishwasher.
