Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Various surfaces throughout the food premises are contaminated with mouse droppings (ie. storage shelves, surface of chest freezer used to prepare food, prep table surfaces, cooktop, etc.
Correction: *Thoroughly clean and sanitize all surfaces in the food premises to remove all evidence of mouse activity
*Frequently clean and sanitize all surfaces to maintain food safety in the premises

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: Employees are using the 2-compartment sink in the kitchen as a multi-purpose sink (ie. food prep, cleaning dishware, & hand-washing). The only soap available at the 2-comp sink is liquid dishsoap (in a repurposed sriracha bottle).
Correction: *Dedicate one sink basin in the kitchen to be used for hand-washing purposes only.
*Ensure hand-soap and paper towels are available within reach of the hand-sink
*Repair the non-operational single-compartment sink (plastic laundry-washbasin).
Comments

-Follow-up to inspection conducted on April 24th, 2023:
-Surfaces throughout the food premises have been thoroughly-cleaned, with minor exceptions (ie. side of upright fridge in kitchen, underneath single-compartment metal sink in sushi bar, etc.)
*Operator began cleaning remaining areas during inspection
-Single-compartment plastic sink is now operational (ie. hot/cold running water, restored)
-Chest freezer lid in the kitchen has been repainted, however, the lid is broken and needs to be replaced.
*Do not place foods directly on the lid surface (use a cutting board on top until lid/freezer is replaced with a new unit)
-Pest control technician visited the premises on April 25th.
*Increase frequency of pest control visits to once per week until rodent activity is eliminated.
*Ensure all foods are stored overnight in pest-resistant containers (ie. rigid plastic bins with lids)
*Ensure all food storage and food prep surfaces are cleaned and sanitized (with bleach solution) every morning and night to ensure surfaces are free of rodent droppings and other contamination
*Maintain a high standard of sanitation in the food premises to prevent future pest activity
*Develop a plan to refurbish/restore degrading/worn surfaces & materials in the premises (ie. walls, shelving, flooring, etc.). Surfaces that are degraded and can't be cleaned easily should be prioritized for restoration.
-Closure order rescinded. Operator authorized to resume operations, subject to the above-noted conditions.
