Observation (CORRECTED DURING INSPECTION):
- Observed deep fried egg stored in room temperature. Staff stated they were being cooled after they were cooked 3 hours ago.
Corrective Action(s):
- Ensure proper cooling procedure is followed. It should reach 60C to 20C or under within 2 hours and 20C to 4C or under within 4 hours. This means that food items will have to be transferred to a cooler after 2 hours max. in room temperature. Products discarded.

Comments

All handsinks are fully equipped.
Broth on continuous boil.
All coolers at 4C or below.
All freezers ranged from -5C to -17C.
Hot held pearls, cooked rice at 60C or above.
QUAT based disinfectant/cleaner in use for the non-food contact surfaces.
Bleach sanitizer available for kitchen use - measured at 200ppm.
High temperature dishwasher reached 71C or above at plate level during the final rinse.
Ice machine in sanitary condition.
Overall improvement observed in sanitation.
Pest control company has been changed and the schedule is changed from biweekly to monthly. No cockroach activity indicated in the most recent report in 2024 April. Mice activity still noted. Back door should be closed when there is no delivery occurring. Continue to search the route of rodent entry by monitoring.

* Minor renovation done inside the kitchen dish pit area to replace the wooden base to stainless steel material.
* Educate all your staff on how to make chlorine sanitizer (half a cap bleach to 1 full spray bottle of water / 1 tablespoon of bleach to a gallon of water)
* There is no best before date labelled for drink syrups. Contact the supplier to ensure all of their products are properly labelled.
