Observation (CORRECTED DURING INSPECTION): Fish fillets, rinsed with water at this time had surface temperatures ranging in between 8.3'C-9.1'C. Operator had advised fillets were taken out from the cooler and washed in less than one hour before the inspection. All fish fillets were moved to cooler at this time.
Corrective Action(s): Ensure to use cold water to rinse fillets and take smaller amount each time.

Observation: 1) Onions stored on floor underneath a double sink.
2) Opened fish fillet observed in a chest freezer.
Corrective Action(s): Ensure all foods are stored at least 6inch off the floor, and never under any sinks to prevent foods from contamination due to accidental leaks. Ensure all foods are stored in/covered with food grade materials.

Observation: 1) Accumulation of food debris observed from the following areas:
-floors underneath and behind coolers/stoves.
-storage shelves above dishwashing sink.
-all handles of coolers/freezers

2) Ventilation canopy hood missing the date for the next scheduled cleaning date.
Corrective Action(s): Major cleaning is required throughout, especially areas mentioned above. [Correct by June 4, 2019]
Have the ventilation canopy hood professionally cleaned.

Observation: Hand sink requires a repair. Water does not drain at a proper rate.
Corrective Action(s): Ensure to have the sink repaired and contact the health inspector to notify.

Comments

Routine inspection conducted:

-Handwash station adequately supplied.
-Refrigeration temperatures satisfactory. Thermometers available.
-Operator had taken Foodsafe Level1. Certificate available on site.
-200ppm chlorine solution available in a bucket to hold wiping cloths.
-Pest company contracted for regular visit. APNA
-Traps in place. No evidence of pest activity observed at this time.
-General sanitation requires improvement. Refer to above.

NOTE: 13 boxes of frozen fish were stacked on floor to be rinsed/soaked in water for thawing. One of the boxes was opened at this time and the fish fillets were still hard frozen to be probed, with surface temperature -13'C. Delivery came in today. Invoice provided at this time. OK.
