304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings noticed behind the glass top freezer in dry storage room, underneath the metal shelving, underneath the dishwasher as well as under the new bar table. A glue trap inspection revealed the presence of cockroaches.
Corrective Action(s): A licensed pest control company is dealing with the pest issue on an ongoing basis. A new pest control inspection must be conducted throughout the premises to identify areas of concern. Recommeded placing mice traps and glue traps in areas as indicated above. A through cleaning must be performed to remove all food and grease build up from equipment, walls and utility pipes. ( immediately).

Observation: Build up of grease noticed on the floor under the cookline, the south wall, top surface of the oven and tiles in the kitchen.
Corrective Action(s): Clean and de-grease all affected areas to remove all traces of grease and food debris. This will greatly help in discouraging pests ( By August 21, 2019).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Condiments cooler ( upright ) registered 10-11 C at the time of inspection.
Corrective Action(s): Repair or replce the cooler so that it maintains 4 C or below. Relocate all food items in the interim ( immediately)

Comments

The following improvements have been made in the premises. Good.
1. The old cooler has been removed from the cooler
2. The floor underneath hot water tanks have been repaired and leveled.
3. The old bar cooler has been removed. The bar surfaces look smooth and easy to clean.
4. Walk-in cooler door has been replaced with metal door.
5. New washable ceiling tiles have been installed in the kitchen

The following actions must be completed to deal with sanitation and pest issues effectively ( Immediately).

1. Re-finish the entire wall from top to bottom in the dishwashing areas. Ensure that water lines and utility lines are re-routed to allow easy cleaning of walls. ( August 31, 2019).
Restaurant must be kept closed during any wall repair or renovations.
2. Provide washable and non-absorbent wall finish (tightly sealed on all sides) from the floor up to 7 feet high.
3. Remove excessive foam seal from the walls and finish the areas with baseboards.
4. Ensure that no grease build up occurs on top of the oven. Avoid storing greasy foods on top of the oven.
5. All minor cracks and crevices on the walls must be sealed.
6. Remove all wooden shelving from across the dishwasher and replace with movable metal storage shelves
7. Repair or replace any missing or broken baseboards to allow for easy cleaning.
8. Clean the back side of the ice maker to remove grease build up.
9. All under-counter shelving and cabinets must be cleaned in the coffee prep area.
10. Re-finish the staff washroom so that all surfaces are smooth, non-absorbent and easy to clean.
11.Replace the weather-stripping on the back entrance door.
12. Ensure all garbage bins and grease collection bins outside are kept covered to discourage pests.
