Observation: Rodent droppings observed in the following areas:
- Inside cabinets at servery area
- Underneath the prep tables in kitchen
- Along the wall across from the walk-in cooler and freezer
- Along the walls of the basement area
Pest control services are currently provided weekly. Reports available for review.
Corrective Action(s): Clean up droppings by wiping with a 1/10 bleach solution. Conduct daily inspections of the premises to monitor pest activity and clean up droppings when observed. Seal up and cracks, crevices, and holes to prevent potential pest entry. Sanitize all food contact surfaces at the beginning of the day prior to preparing food.

Observation: The handsink in the main prep area is not in working order.
Correction: The operator noted that the handsink is to be replaced soon. DATE TO BE CORRECTED BY: Immediately.

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, large prep, small prep, stand-up) ≤ 4°C
- Freezers (walk-in) are ≤ -18°C
- Hot holding units are ≥ 60°C
- Low temperature dishwasher is available. 50 ppm chlorine residual detected.
- Glasswasher is available. 50 ppm chlorine residual detected.
- 200 ppm Quat sanitizer is available
- Ventilation hoods are maintained
- Pest control services in place. Weekly service provided.

Note:
- Temperature logs are maintained according to operator, but were not available on site for review. Send temperature logs from December to the health inspector. Ensure all logs maintained daily and kept on site.
- Permit to operate is missing the decal for this year. Ensure valid decal is affixed to the permit.
