Observation (CORRECTED DURING INSPECTION): Patriot cooler in the front kitchen is currently maintaining a temperature of 10-11 degrees Celsius.
Operator transferred potentially hazardous foods to an alternate cooler (placed in the unit this morning)
Corrective Action(s): Discontinue use of this cooler until it can be inspected and repaired by a service technician.

Comments

- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius with one exception (see above).
- Freezer temperatures are ≤-18o Celsius
- Hot-holding temperatures are ≥60o Celsius
- Chlorine bleach available for use as a sanitizing chemical. Please ensure to have sanitizer solution available at all times. Mix 1 teaspoon of bleach per Litre of water to obtain a ~100ppm solution.
- High-temp dishwasher was not warmed-up at time of inspection. Provided thermolabels to operator to check dishwasher temperature. Thermolabel should indicate that the temperature reaches 71 Celsius or higher.
- Overall sanitation satisfactory, however, some areas (walk-in cooler, deep fryer area) are in need of a thorough cleaning.
- No pest activity observed during inspection
