Met up with technician on-site to address cooler issues.

Issues addressed:
- Defrosting cycle was set for 45 minutes during busy hours. Defrosting cycle was reset and recalibrated to 15 minutes each during less busy times of the day to maintain temperature
- Garbage bin and obstacles blocking the intake for the cooler was removed, allowing for better air circulation
- Setpoint changed to 25F at the coil sensor. Ambient temperature reached 35F at time of inspection

Operator is now allowed to add potentially hazardous foods such as chicken burritos back into the display cooler. Continue to monitor temperatures and ensure that it can maintain 4C (40F) or less throughout the day

Door gap:
- Operator has changed the seal underneath the door to eliminate the gap - good

All pending infractions have been addressed Thank you for your co-operation.

Recommendations: As discussed last time, please acquire a heat and water resistant thermometer probe with a heat shield to monitor temperatures (must reach 71C at the plate)
