Observation: Lighting in main food prep area a bit low (highest reading in area is 50 foot candles when it should be closer to 200) and two of the four light bulbs were out.

Note: Container of water used to store spoons and knives in continual use changed regularly. Add ice to this to further control bacterial growth.
General observations:

√ Food up off floor ≥6”, good stock rotation noted
√ Food well organized and labelled
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Quats sanitizer available at 200ppm
√ High temperature dishwasher sanitizing at ≥71°C
√ Dishwashing stocked with dish soap, sanitizer, hot and cold running water
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is satisfactory
