Observation (CORRECTED DURING INSPECTION): Quat sanitizer in 2 buckets at front prep area measured at or below 100ppm.
Corrective Action: Buckets of sanitizer were changed at time of inspection
Staff change buckets every 2 hours. Change more frequently if buckets become visibly soiled / dirty.
Quat sanitizer measured at 200ppm after solution was changed. Quat sanitizer of 200ppm is required in order to properly sanitize food contact surfaces.

Observation: (1) Rodent droppings observed underneath dishwasher, on lower shelves of front prep area, and underneath prep areas
(2) Fruit flies observed throughout facility
Corrective Action: Wash and Sanitize are areas where droppings are observed. Do not store any items on lower shelves and continue to monitor for activity.
Pest Control is in place through the mall and independently. Service person comes once a week
Contact Pest Control about ongoing pest infestation.

Observation: Large hole in wall behind ice bin at front prep area. Droppings observed in this area.
Corrective Action: Seal /Repair hole in wall. Seal any openings that may allow the entrance of rodents (holes larger than 1/4") Consult with Pest Control company on pest management plan.

Observation (CORRECTED DURING INSPECTION): Cups of sanitizer for sanitizing frappe wands were unlabelled.
Corrective Action: All chemicals must be labelled to prevent contamination to food items. Cups were labelled at time of inspection.

Walk-in freezer measured at -18C

Hot holding of soup, sandwich meats and potatoes measured at 60C or above.
High Temperature dishwasher measured at 74C at the plate level after the final rinse
Sink plugs were available at 3-compartment sink
Quat sanitizer in labelled bottles measured at 200ppm
Ice machine was sanitary and scoop store separately
All food items were stored off the ground.
Storage in walk-ins and dry goods was organized
