Observation (CORRECTED DURING INSPECTION): Equipment, utensils, food contact surfaces inadequately sanitized due to improperly working dishwasher.
Corrective Action(s): Immediately re-wash and re-sanitize ALL equipment, utensils, and other food contact surfaces. The dishwasher has been fixed at the time of the inspection.

Observation (CORRECTED DURING INSPECTION): Food being prep on top of the main handwashing station in the kitchen. Food drainer/basket stored directly inside the sink in one of the handwashing stations.
Corrective Action(s): Remove the drainer/basket. Do not prep food here. All designated handwashing stations are meant for washing hands only.

Observation: - Buckets of uncovered prepped vegetables/foods stored directly beside the main handwashing station.
- Double stacking of food inside the undercounter cooler/ walk in cooler.
- Multiple food items stored uncovered inside undercounter cooler/walk in cooler.
- Rice scoop stored directly on top of the rice cooker.
- Bowl stored directly inside the ice machine.
- Food debris observed inside the ice machine.
Corrective Action(s): - Move the buckets of food away from the handwashing station. Water splashes while washing hands can contaminate the food.
- Do not double stack foods. Cover all foods with proper lids or saran wraps.
- Store rice scoops inside ice water.
- Do not store bowl or ice scoop directly inside the ice machine.
- Deep clean the ice machine. This means drain, scrub, and sanitize.

Observation: Build up of grease, dirt, and food debris in the following areas:
- floors throughout the kitchen
- spills in the dry storage area
- underneath the dishwasher, 2 compartment sink
- inside the walk in cooler
- on shelving racks inside the walk in cooler
- around the wok station.
Corrective Action(s): Deep cleaning is required. This means hard to reach areas (ie behind shelving racks, equipment, underneath the sinks).

Observation (CORRECTED DURING INSPECTION): - Low temperature dishwasher dispensed 0ppm chlorine sanitizer at the time of the inspection.
- Faucet at the handwashing station near the wok station is leaking.
Corrective Action(s): - Low temperature dishwasher was fixed at the time of the inspection. Dishwasher dispensed 50ppm chlorine sanitizer at the plate's level.
- Fix the faucet.

Observation: Missing working thermometers inside multiple coolers.
Corrective Action(s): Provide working thermometers (NSF certified) inside all refrigeration units.

Comments

- General sanitation needs improvement.
- All handwashing stations are supplied with hot/cold running water, soap, paper towels.
- Surface sanitizer available in designated white bucket at 100ppm chlorine concentration. Store wiping rags inside the sanitizer when not in use.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity. A third party pest control company inspects monthly.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Hot holding units > 60C.
