Observation: Large two door upright cooler - left side air 7 C, right side air 10 C, your thermometer 10 C, food temperature 9 C.
Corrective Action(s): All potentially hazardous foods must be stored at 4 C or colder. Discard any potentially hazardous foods (eggs, milk, cream, cheese, meat, poultry, cooked vegetables, etc.) that have been stored in this cooler at > 4 C for > 2 hours. Defrosting items (salmon) moved to alternate cooler and recently cooked sausages moved to alternate cooler. Provide update. Correct immediately. Do not store PHFs in this cooler until it can keep food at 4 C or colder.

Corrective Action(s): Once cooled, cover the muffins to protect from contamination. Store food inside to protect from contamination from pests and birds.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Two or more rodent droppings noted on floor under shelving beside small bar cooler in front area kitchen. There is a bare plywood pony wall/cabinet constructed beside and behind the prep coolers.
Corrective Action(s): Clean floor under shelves and monitor this area for new rodent activity. Seal all bare wood surfaces so that they are smooth and impervious to moisture and can be cleaned.

Designated hand washing station has liquid soap and paper towels.
No hot holding during inspection. Reviewed procedures for hollandais sauce - made daily, cooked to 74C, hot held at 60 C. Keep metal stemmed thermometer available.
Line coolers, dessert display cooler, are at <= 4 C - good.
Two door cooler - see above.
Dishwasher was not checked as it was turned off for the day.
Watch dates on pre-made products (cookies and cream cake).
Pest monitoring traps under dishwashing sink are empty - good.
Person in charge advised that they have valid Food Safe certificate. Certificates obtained before 2013 expire and an online refresher course is required to renew Food Safe.
