201 - Food contaminated or unfit for human consumption [s. 13]
Observation (CORRECTED DURING INSPECTION): Frozen kofta balls (x4) and gajrela burfi pieces (x3) were lying in the chest freezer in direct contact with inside surface of freezer and had ice build-up. No bag or container was used for food storage. Operator voluntarily discarded the above mentioned food.
Corrective Action(s): Ensure that food is stored in food grade containers or packages in a way that protects the risk of food contamination.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Food debris build up was observed on the veggie cutter that could potentially harbour bacteria and can cause food contamination.
Corrective Action(s): Remove the debris and wash & sanitize the veggie cutter. Ensure that it is maintained in good sanitary condition.

Observation: Handwash sink available in food prep area did not have supply of hot water. Operator stated that the supply was shut off from under the sink due to leakage problems.
Corrective Action(s): Repair the sink and ensure that adequate supply of hot and cold running water, liquid soap and single use paper towels are available on site at all times.

Observation: Mouse droppings were observed in the following areas:
- Under the mop sink and dishwashing sink
- Under the shelving near handwash sink in food prep area
- Under the counter in bar area
Corrective Action(s): Remove the mouse droppings and disinfect the abovementioned areas with 1 part bleach to 9 part water solution. Use proper PPE during cleaning. TO BE CORRECTED BY - March 25, 2022

Observation: 1. Build-up of dirt and food debris was observed along the walls and behind the cooking line.
2. Grease build-up observed on the ceiling tiles nears ventilation fans and on walk in cooler ceiling.
3. Thick ice build-up observed in all chest freezers.
Corrective Action(s): - Remove build up of dirt/food debris/grease and clean the above mentioned areas.
- Remove the ice build up in freezers as it could potentially lead to food contamination.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler at 3C
- Display cooler in the front at 3C
- Prep cooler at 2C
- Chest freezers (x4) at -18C or less
- Hot holding at 61C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Low temp mechanical dishwasher used for dishwashing purposes. 50ppm chlorine residual measured at rinse cycle.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- 3 compartment dishwashing sink available for manual dishwashing.
- No grease/dirt build up observed on vents. Last service conducted in Feb 2022.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
