Observation: Built-up of grease and dust observed on exhaust hood vents above the cookline. Built-up of food debris and/or syrup observed underneath the cookline, dry storage racks in the dry storage area, shelving units in the walk-in cooler.
Corrective Action(s): Clean and sanitize the aformentioned areas. Daily cleeaning underneath equipment and weekly exhaust hood vent cleaning must be followed to prevent built-up of food debris, grease, or dust. Corrected by: January 12, 2023.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottle for the front measured at 200ppm. 3-compartment sink available. High-temperature dishwasher measured at 76.7C final rinse temperature.
Walk-in cooler, preparation cooler, and stand-up cooler measured at 4C. Chest freezers measured at -18C.

At the time of inspection the back hallway is clear and no food preparation observed at the back hallway. Friendly reminder no food preparation or food storage to be at the back emergency hallway. No kulfi production permitted at this time. Operator to submit updated food safety plan regarding kulfi production.

NOTE: Operator informed that only 1 chest freezer is necessary for daily operation. Inspector informed he can remove one chest freezer but ensure the remaining chest freezer is easy to access in the dry storage area and hold an air ambient temperature of -18C or lower.
