Observation (CORRECTED DURING INSPECTION): * Sanitizer was not ready to use in kitchen/prep areas so operator had to set up in all areas (ready to use in spray bottle); quaternary ammonium at 200 ppm is used for food contact surfaces in kitchen and prep areas; sanitizer was found to be at 200 ppm in spray bottle once set up
Corrective Action(s): * Ensure adequate sanitizer available in all kitchen/prep areas ready to use at all times
