Operator wants to start preparing Greek Salad Dressing on site to distribute to other retail food markets for sale. -Handwash stations adequately supplied. -Refrigeration temperatures within requirement. Temperature monitoring system in place. -Dry storage room satisfactory. All ingredients for dressing are stored in dry storage room. -Prep area maintained in sanitary condition. -2 pails of dressing to be prepared each time and stored in walk-in cooler --> bottled and sealed --> stored at room temperature. -Lab test results submitted. pH <4.6; water activity <0.85. Operator is waiting for the shelf life of the product to be determined by the lab for the labelling. -Food Safety Plan for dressing submitted. The minimum amount of information to be on label: product name (common name), net amount (g/lbs/ml), ingredients, name of company and contact information etc. Please contact Canadian Food Inspection Agency regarding the Nutrition Fact Table requirement. Facility approved to prepare Greek Salad Dressing for distribution to other retail food markets. Confirmation Letter for the preparation of the dressing to be issued.
