Observation (CORRECTED DURING INSPECTION): Large pot of curry lentils measured at 14.9'C with probe thermometer. Staff stated that the lentils were prepared the night before (>6 hours ago). Staff voluntarily discarded the lentils during inspection.
Corrective Action(s): All potentially hazardous foods must be cooled from 60'C to 20'C within 2 hours and from 20'C to 4'C within 4 hours. Obtain an ice wand to mix large portions of cooked foods. Ensure to cool large quantities of potentialy hazardous foods using one of the following methods:
- in large shallow pans
- by mixing the foods frequently
- use an ice wand to mix
- placing the food in a blast freezer

Observation (CORRECTED DURING INSPECTION): Hand washing station in back cookie processing area is obstructed and not supplied with paper towel. Staff placed paper towel at the dispenser during inspection.
Corrective Action(s): Maintain all hand washing stations unobstructed and supplied with paper towel, hot and cold running water and liquid soap at all times to promote proper, frequent hand washing.

Observations:
- Walk-in cooler at 2'C
- Preparation and sandwich coolers at or below 4'C (top and bottom)
- Glass door coolers display coolers (X2) at 4'C
- Stand-up and chest freezers at or below -19'C
- Hot-holding units at or above 60'C
- Temperature logs are maintained - good!
- General sanitation is good during inspection
- Hand washing station at front service area, kitchen and staff washroom observed unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- 3-compartment sink available with drain plugs
- Bleach sanitizer in spray bottles (X3) measured at 200 ppm chlorine concentration with test strip
- Equipment stored in a sanitary manner
- Chemicals are stored away from food
- All food observed stored covered and at least 6 inches off the floor
- No signs of pests during inspection
- Staff observed wearing hairnets
- FOODSAFE Level 1 trained staff is available on site

- Operator mentioned they would like to make changes to the service area. Any changes must be approved by the health inspector prior to construction
