Violations noted on report ZDER-AE3UVU has been corrected except the mechanical dishwasher repairs.

-Wiping cloths soaking in 200 ppm chlorine sanitizer. Cloths appear clean.
-Dishwasher still requires servicing no sanitizer detected. Dishware is soaked in 200 ppm chlorine solution in 2 comp sink for 2 minutes before air drying for sanitizing step.
-Dirty mop water has been dumped - no water in mop bucket during inspection. Minimal fruit flies noted.
-Mouse droppings in back has been cleaned up
* Ensure traps are reset after they are snapped. Additional sticky traps have been set along the walls.
-Front handsinks are clear of obstructions
-Food is all covered. Raw meats stored below ready to eat foods.
-Scoops all have handles stored out of food.

***50 ppm chlorine must be detected at the plate in the final cycle. Technician in Oct 3, 2016. Parts ordered and further work to be completed. Inform EHO when dishwasher is repaired.
