*a reasonable amount of food items were being kept at room temperature - eggs, blanched fries, hashbrowns. ensure that food being kept at room temperature will be used up within 30-60 minutes, otherwise, move products to the coolers
Freezers measured less than -18C

Observed proper cooling of soup in a cold water bath.
