212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: 1) The thermometer used for measuring the dishwasher temperature should have a min/max function where it records the highest and lowest temperatures measured inside the dishwasher during a wash. The current thermometer doesn't appear to have this function. It also steams up so that the numbers are not visible. Operator places the thermometer inside a cup when measuring the thermometer.

2) On reviewing the temperature log, it was noted that the dishwasher temperature was recorded as 12 degC. This is very low and most likely inaccurate.
Corrective Action(s): 1) Replace the thermometer with one that has a Min/Max function. Purchase a shield to use with the thermometer instead of placing it in a cup.

2) The dishwasher rinse temperature should be a minimum of 71 degC at the plate level. Anything below this means the dishwasher isn't working properly and it should be fixed.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The seal around the door of the hot holding unit under the POS station is not intact so the door isn't closing completely. The temperature gauge is not working on the unit either. The temperature inside the warmer was 47 degC. Operator mentioned that the pizzas only stay in the warmer for about 15 minutes before they're picked up. Staff make pizzas close to the pick up times.

2) There's water pooling along the bottom inside Fridge #1.
Corrective Action(s): 1) Replace the seal. Get the gauge fixed. The unit must be able to maintain a temperature of at least 60 degC.

2) Get the issue addressed.

GENERAL COMMENTS:
Back upright freezers are below -18 degC; Front undercounter freezer is at -15 degC, but all items inside are frozen.
Both prep coolers are below 4 degC; Both upright coolers in the front are below 4 degC
Dishwasher rinse temperature was 71 degC at plate level.
Sauces are date stamped.
Hand sink's fully equipped.
Manager on duty has FS Level 1 certification.
200ppm Quats sanitizer is available for use. Buckets are time stamped are used to ensure solution's refreshed every 2 hours.
Temperature log is being maintained on the computer.
Rentokil pest control company is on a monthly contract. Service reports are on-site.
