Observation (CORRECTED DURING INSPECTION): 3 comp manual dishwashing method in place - 3rd compartment noted with inserts and cutting boards soaking in 200 ppm QUATS. Sanitizer solution only filled a third of the compartment - dishware half submerged in solution.
Corrective Action(s): Ensure dishware requiring sanitizing completely submerged in sanitizer solution for 2 minutes before air drying as per proper manual dishwashing practices.

Observation (CORRECTED DURING INSPECTION): Middle handwashing station noted with hot & cold water and liquid soap - no paper towel available in dispenser.
All handwashing stations were clear of obstructions.
Corrective Action(s): Ensure all handwashing stations are fully supplied with hot & cold water, liquid soap, paper towel and free of obstructions. Refill paper towel dispenser when empty.

Observation: Undercounter freezer noted -1 C. Food was not completely frozen solid.
Corrective Action(s): Ensure freezer unit is able to maintain a temperature at or below -18 C. Relocate PHF to functioning freezer if freezer is not functioning properly.

Corrective Action(s): Ensure freezer is capable of reaching and maintaining freezer temp of less than or equal to -18 C. Monitor unit and repairs may be required.
Operator during inspection turned the setting to a colder setting. At the end of inspection the unit reached -9 C.
