Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (wrapped beef burrito, a small container of boiled eggs, one shell egg, egg salad, turkey slices, and cheese slices) was above 4 degrees C (between 15 to 21 degrees C internally) for more than 2 hours in the domestic fridge #2.
Corrective Action(s): Cold potentially hazardous food stored above 4 degrees C for more than 2 hours was discarded by staff member. Ensure cold potentially hazardous food is stored at or below 4 degrees C. Refer to the approved food safety plan for details.

Observation (CORRECTED DURING INSPECTION): Frozen food (pizza and cut fruit product) was above -18 degrees C in the domestic freezer component of Fridge #2 however was still below 4 degrees C (out of the danger zone).
Corrective Action(s): Frozen food was transferred to another freezer at or below -18 degrees C.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Domestic cooler was above 4 degrees C (at 12.6 degrees C initially and then at 16.7 degrees C) at the time of inspection and the temperature was previously checked only during the morning time (more than 6 hours ago).
2. Freezer component of domestic fridge #2 was above -18 degrees C (at -0.1 degrees C) at the time of inspection.
Corrective Action(s): 1. Adjust, repair, re-service, or replace the domestic cooler so that it maintains a temperature at or below 4 degrees C; Correct within 2 weeks and contact the district Environmental Health Officer. Do not store any potentially hazardous food inside this unit until it maintains a temperature at or below 4 degrees C.
2. Adjust/re-service/replace the freezer to ensure that it can maintain an ambient temperature at or below -18 degrees C.

Monitor refrigeration temperatures at least every 2-4 hours throughout the day to ensure that they are maintaining temperatures at or below 4 degrees C for coolers and -18 degrees C or less for freezers to prevent food safety issues. Refer to the approved food safety plan for details.

Observation: Thermometer in freezer #2 was showing an ambient temperature of -10 degrees C when it was actually at -0.1 degrees C based on the EHO's thermometer.
Corrective Action(s): Replace the thermometer with another thermometer that is accurate to within 1 degrees C.

Comments

Permit to operate was posted in a conspicuous location.
Handsink was adequately supplied.
Dishwasher final rinse temperature was at 77.7 degrees C (71 degrees C or hotter) internally at the plate.
100 ppm chlorine sanitizer was available in the labelled spray bottle.
No signs of recent pest activity were evident at the time of inspection.
Other coolers were at or below 4 degrees C in the outer hallway area and downstairs shed.
Other freezers were at or below -18 degrees C in the outer hallway area and downstairs shed.
Records of refrigeration temperatures on a daily basis were in place.
No hot-holding was occurring at the time of inspection.
