103 - Failure to hold a valid permit while operating a food service establishment [s. 8(1)]
Observation:
Yearly health permits fees not paid. The facility is operating without a valid decal. Hand delivered the outstanding permit fees letter to the kitchen manager.
Corrective Action(s):
Immediately pay the fees of $250 within 10 working days. Failure to do so will result in further enforcement action such as issuance of fines or closure of the facility.

304 - Premises not free of pests [s. 26(a)]
Observation:
Observed large number of black flies in the dry storage room and a few, fresh rat droppings in the room with the special "dietary cooler". Fly traps, blue light, snap traps, and catch-all traps observed throughout the facility. Facility has monthly contract with Orkin Pest Control, reviewed the reports.
Corrective Action(s):
Increase the visits from the pest control technician so traps are checked more frequently, and any caught pests are removed immediately to prevent flies. Rodent proofing of building should be done to prevent entry of pests.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
Plastic inserts and lids were found to have cracks and chips. These items are not cleanable or safe (pieces of plastic can fall into food).
Corrective Action(s):
Inspect all plastic inserts and lids, discard damaged ones and purchase new ones. Inspection of all utensils, equipment, and containers shall be done on a regular basis.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -16C or colder; thermometer present; and temperatures recorded twice a day.
- High temperature dishwasher in kitchen and all serveries were 75.4C or hotter at the plate's surface as per max/min thermometer.
- The pot washer in the kitchen was 76.5C at the plate's surface as per max/min thermometer.
- Quats sanitizer was 200ppm in spray bottles. Chlorine bleach sanitizer present, but only used to sanitize if dishwashers are not working correctly.
- All food stored in food grade containers; covered; date coded; labeled; in groups with raw proteins separate from RTE foods; and 6" off the floor on shelves or racks.
- No expired foods in use. FIFO rules being followed.
- Walls and floors in good working order.
- Staff wear disposable gloves when handling foods. Remind staff the the gloves shall be taken off and discarded when they become dirty or have finished a task. Staff shall NOT rinse them off the gloves when they become dirty.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- FoodSafe certified staff present.
- General sanitation level is good.
