Observation (CORRECTED DURING INSPECTION): 1) None of the food preparation areas, where fish was being cut or packed, had accessible sanitizer.
2) Dirty wash cloths were left on food counters all around the facility.
Corrective Action(s): 1) The operator filled sanitizer pails for each station at the time of inspection. Ensure sanitizer is always available to allow for safe food handling. Use the test strips to ensure QUATS is maintained at 200 ppm concentration.
2) Wash cloths/rags should be put in the wash after each use or be kept in sanitizer solution to prevent the growth of pathogens that can cause foodborne illness.

Comments

Routine inspection conducted.

Temperatures:
- Walk-in cooler: 3C
- Display coolers: </= 4C
- Display freezers: </= -18C
- Fish tanks: <10C, one of the fish tanks had warm water fish which was kept at 25C

Sanitation:
- Hand washing sinks were adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
- Knives were in good sanitary condition.
- Shaved ice machine and general ice machine were in good sanitary condition. Scoops were stored outside the chamber on a stand.
- 2-compartment sink had plugs.
- Preparation sink at the back is also used as a hand sink.
- Fish tanks are cleaned weekly and the filters are back-washed weekly.
- The packing station is in satisfactory sanitary condition. It is recommended that the area be de-cluttered to allow for adequate sanitation.

Storage:
- Shellfish in the walk-in cooler are kept on ice and with tags.
- Items are labelled and delivery lots are tracked.
- Tags for shellfish are kept for up to 1 year. Operator has the records on site.
- General storage practices are satisfactory.

Pest Control:
- No signs of pest activity noted at the time of inspection.
- Facility is monitored by a professional pest control company.

Administration:
- Temperature logs are up to date.
- Pest control inspection reports are kept in records at the main office.
- Tags for shellfish were available. Proof of purchase (approved sources) was available on site.

COVID-19 Safety:
- T&T corporate COVID-19 Safety plan is available on site. It has also been circulated via email and messaging services to all staff.
- Temperature checks occur at the store entrance for all staff and customers.
- Double masks are worn by most staff.
- High touch surfaces are disinfected frequently.
- Breaks are staggered.
- Lunch room has dividers.
- Maximum occupancy is posted in common staff areas.
