Observation: Ice machine has grime build up on the inside side of the door and also on the top portion.
Corrective Action(s): Empty, drain, wash and sanitized prior to making more ice. Currently, this equipment is cleaned/sanitized every month. Increase frequency of cleaning for this equipment as ice is consumed by customers in drinks.

Observation: Garbage disposal area and compost/recyclable enclosure had some litter and debris. Door between the storage area and garbages disposal area has space for rodents to enter the premises.
Corrective Action(s): Clean the garbage disposal area and compost enclosure and install a weather strip on the door between the storage area and garbage disposal area.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There are areas that require more attention when sweeping and mopping. Back kitchen area is tight and a lot of equipment that are very close to each other. It may be difficult to clean in these areas but they need to be done also.
Corrective Action(s): Ensure to pay attention to areas that can build up food debris. Equipment may need to move to clean in these areas. Train staff to clean as they go and clean when not busy.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Back storage area flooring surface has been worn out to the bare concrete and some areas of the kitchen flooring has also worn out (i.e. grouting between the tiles).
Corrective Action(s): Resurfacing required in the back area. Management said that there will be renovations at this location in the near future to increase cold storage capacity and for better flow in the kitchen. Please ensure to submit the renovations plans for review and approval prior to construction.

Hand wash stations provided with liquid soap and paper towels.
Chlorine sanitizer (in buckets for wiping cloths) measured 100 ppm.
Quats sanitizer measured 200 ppm (in spray bottle).
Hydrogen peroxide now in use (in spray bottles) - 3500 ppm (test strips available).
Walk-in freezer registered -18 deg C or below.
Walk-in cooler registered at 2-3 deg C.
Prep line coolers were at or below 4 deg C.
Prep line freezers were at -10 to -16 deg C (fries, nuggets, bacon).
Hot holding for eggs, sausages, and bacon was at 60 deg C.
Temperature log was available and up to date.
Staff were wearing clean uniforms and hair restraint.
No signs of pests noted at time of visit. Pest control monitoring in place.
Staff washroom and dining room washrooms provided with sanitary facilities.
