1) Back room dry ingredients bins have food smears from dirty hands opening
2) Back room shelving needs products removed from shelves, then spills cleaned up
3) Handles and faucets in kitchen dirty from use
4) Under turned off prep cooler requires cleaning

Hand sink across from sinks supplied with liquid soap, hot/cold running water
Kitchen hand sink (2metres away) supplied with paper towels. This sink not currently in use as water ran yellow when turned on
Please use the hand sinks ONLY for hand washing. Do not rinse off tools, clean plates, etc as these sinks are to be kept clean!
Walk in cooler at 2C
Prep cooler 4C below.
**As discussed, keep lower portion cooler (2C) to compensate for lids being open during use.
No hot holding at time of inspection - buffet line is not in use unless set up for a special event
Sanitizer residual in dishwasher measured at 50ppm - good
Temperature logs are available on request
Cleaning noted above.
Reminder to clean and sanitizethe ice wands prior to use. Don't overfill with water as lids will crack! Freeze upright in the chest freezer
