Observation (CORRECTED DURING INSPECTION): All plastic liners in beverage display (assorted prepackaged drinks) observed to have accumulation of dirt/black mold-like material.
Corrective Action(s): Directed staff to clean and sanitize immediately. For a long term solution, you may wish to switch to wire racking as the plastic liners have pockets that can trap moisture/debris etc.

Observation: Bag of raw beef stored on top of bagged vegetables in standup cooler by dry storage shelf. Insert of raw beef stored on top of cooked sausages in prep cooler.
Corrective Action(s): Ready to eat items discarded. Operator needs to reorganize food storage to protect food from contamination as well as facilitate cleaning. Kitchen staff must be retrained on proper food storing procedures.

In speaking with owner, currently staff members have inconsistent formulations for bleach sanitizer --> you must develop standardized system to ensure proper sanitizing of food contact surfaces (reminder that 1 tsp bleach: 1 L water is approximately 200 ppm).
