Observation (CORRECTED DURING INSPECTION): Multiple foods in the dessert kitchen walk-in cooler were at 9~10 degrees C. Desserts prepared in the last 2 hours were relocated to a working cooler. Discarded five containers of Meadow fresh milk 4L and eight bags of 10L whole milk due to time and temperature abuse.

Observation (CORRECTED DURING INSPECTION): Three large mixing bowls in the dessert kitchen had visible dried food debris on them. The operator directed his staffs to clean and sanitize the bowls.

Observation (CORRECTED DURING INSPECTION): The hand washing sink near the customer washroom entrance did not have liquid soap. The operator replenished liquid soap at this time.

Observation: Multiple food items were not covered (e.g., dessert items, sliced nuts, etc.) throughout the facility.

Observation: Observed moderate amount of fruit flies on site - mainly in the finished dessert storage area and dessert kitchen.
Corrective Action(s): Implement Integrated Pest Management (IPM) approach. Improve sanitation, cover foods, work with pest control company to implement control measures. Correct this by: June 29, 2021

Observation: The ambient air temperature of walk-in cooler in the dessert kitchen was measured at 11-12 degrees C. A technician arrived at this time to service the cooler.
Corrective Action(s): The walk-in cooler is to be serviced. Ensure temperature is at or below 4 degrees C at all time. Correct this by: June 22, 2021.
