Comments

- General sanitation is good.
- All handwashing stations supplied with hot/cold running water, soap, paper towels.
- Three compartment sink available for manual dishwashing. Chlorine sanitizer available at 100ppm concentration.
- Surface sanitizer available in spray bottle at 100ppm chlorine concentration.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.

Temperature control:
- All coolers: < or = 4C. One of the two display cooler was not in use at the time of the inspection.
- All freezers: < or = -18C
- All refrigeration units equipped with working thermometers.
- Daily temperature log must be kept up to date and available on site. This will be verified during the next routine inspection.

Note: Handling of raw food is not allowed at the store front. All processing (ie cutting, slicing, dispensing) must be done in the processing area.
