Observation (CORRECTED DURING INSPECTION): All sanitizer buckets in the front area were tested at less than 50ppm quat sanitizer (two at approximately zero parts per million concentration).
Corrective Action(s): Refilled with fresh solution at 200ppm during inspection. Ensure staff refill these as required to maintain this strength. Ensure timestamps are recorded on the bucket labels - this is not happening currently.

Observation (CORRECTED DURING INSPECTION): 1) [Repeat violation]: ice scoop was stored handle-down in the ice machine bin.
2) Staff clothing and personal items were placed directly on top of bagged cups and disposable items for customer service in the storage area.
Corrective Action(s): 1 ) Corrected during inspection. Ensure this is stored in a clean container outside of the machine, or ensure the handle of the scoop does not come into contact with ice.
2) Remove all clothing and personal effects from direct contact with these items by 5pm today (29th December). Ensure personal items are kept in a designated area, separate from food and dishware.

*General sanitation satisfactory. No pest issues observed at time of inspection.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Three-compartment sink in working order. Staff appear to be using full 3-compartment warewashing methods.
*All cooler and freezer temperatures satisfactory. Thermometers available.
*Milk coolers operating at 4 C or colder.
*Food stored off the floor and generally protected from contamination.
*Quat sanitizer dispenser operating at 200ppm.
*Ice machine maintained in clean condition (see violations section regarding scoop).
*Staff glove use and hand washing practices satisfactory.
*Hot holding temperatures in steam bath and warming units measured at 60 C or higher.
