Observation: Food temperatures are above 4 C (40 F) in the small 1 door cooler by the dishwasher (10 C/50-52 F), 2 door cooler by the dishwasher (43 F), and large walk in cooler behind the bar (7.5 C/45 F). Fish batter is being kept at kitchen room temperature. All other coolers are at 4 C or colder.
Corrective Action(s): Poultry in the small 1 door prep cooler has been discarded. Other fish and poultry which staff advised was just prepped have been moved to another cooler. Follow your food safety plan and check temperatures regularly to ensure that all potentially hazardous foods are kept at 4 C/40 F or colder. Fish batter has been discarded. Keep fish batter on ice or in fridge and discard if above 4 C for more than 2 hours.

Observation: Ceiling above the area now used for food preparation by the 2 door upright freezer is difficult to clean.

Comments

Ensure all coolers have an accurate indicating thermometer and record temperatures daily (twice daily for large walk-in).
Provide sanitation plan information regarding storage of tongs in quats sanitizer. Follow manufacturer's directions regarding chemical use and air dry tongs if required.
Discussed cracked wooden boards used to serve sandwiches etc. Disposable paper is used to cover the board. Discard any boards that are badly cracked.
