Observation: Temperature of the bar fridge was too warm.
Corrective Action(s): Monitor and dial down temperature if it doesn not get colder after the lunch service. Keep minimum amount of perishable items in this fridge (i.e., cream, whipped cream). At closing, move them to another fridge for overnight storage.

Comments

Check temperature of refrigeration units daily and record temperatures on log sheets.
Incorporate a consumer advisory in your menu to inform diner of the inherent risk of consuming undercooked eggs in the hollandaise sauce.
Add "quats sanitizer" on the label of the spray bottles that say "dining tables".
Operator stated that the pooled eggs(from shelled eggs) are intended for scrambled eggs and omelettes. Ensure that they are cooked fully before serving.
Crack eggs in single orders for customers requesting eggs that are not fully cooked (or use pasteurized eggs).
Keep the staff washroom door shut.

General sanitation and maintenance are good.
Handwashing stations are satisfactory.
Temperature of walk-in cooler, freezer and under counter fridges are satisfactory.
Sanitizer is detected in the dishwasher.
Food probe thermometer and IR thermometer are available.
