Observation (CORRECTED DURING INSPECTION): Deep fried meats inside the walk-in cooler measured with an internal product temperature of 18C. Operator stated it was cooked this morning. When asked about the cooling procedures, operator stated the food was cooled on the counter at room temperature for 2 hours then moved in to the walk-in cooler.
Corrective Action(s): Do not leave potentially hazardous food at room temperature for 2 hours. Food must be cooled from 60C to 20C in 2 hours. Include facilitated cooling procedures such as small, shallow trays or stir the meats every 15 minutes.

Observation (CORRECTED DURING INSPECTION): The following food was not hot held below 60C.
1. Internal temperature for fried rice measured at 48C.
2. Internal temperature for stir fries measured at 55C.
3. Internal temperature for mixed vegetables measured at 50C.
Corrective Action(s): All aforementioned food were discarded by the operator. Adjust the temperature setting on the hot holding units or service the unit to ensure at least 60C is reach for the food. Monitor the temperature and correct if needed. This is a repeated violation, further violations may result in enforcement actions such as Violation Tickets or Orders.

Observation (CORRECTED DURING INSPECTION): Frozen meat in an insert thawing at room temperature.
Corrective Action(s): Do not thaw food at room temperature. Frozen food should be thawed properly inside a cooler or under cold running water. Operator move the frozen meat into the cooler.
