Observation (CORRECTED DURING INSPECTION): Pesto sauce in a bottle stored on the pizza preparation counter at ambient temperatures. These are switched out every 2 hours according to the staff and the bucket states to keep frozen and thaw prior to use
Corrective Action(s): Ensure all cold potentially hazardous foods are not stored between 4 and 60C for extended periods of time that would permit the growth of pathogens or their toxins. Switching out cold potentially hazardous foods into the cooler does not make them safe.
